Bacon Apple Pie

That quest, unfortunately, has not yet been completed. I have, however, created a very good bacon apple pie. It’s sweet, salty, a little meaty, just a bit smoky with a hint of spices. The thing is, it doesn’t quite feel like a cohesive whole. It’s more like a good apple pie with some bacon. The flavors complement each other well, but they haven’t quite merged into that transcendent whole-is-more-than-the-sum-of-its-parts experience that i just know this pie could (and eventually will) be. That said, this pie as is tastes pretty great; I have no qualms about posting this recipe. But that doesn’t mean I won’t continue to tweak it in search of perfection.

    The bacon should be rolled into the crust, and bacon bits put in with the apples. Then drizzle the bacon grease over the top and bake :) That should get the flavors to mingle!

    Good bacon morning! I think they needed to commit and mix the bacon INSIDE the pie with the apples… maybe some maple syrup to tie it all together!

    You’ll need:

    15 thick slices of bacon
    2 onions
    1,5 pounds of apples
    Fresh parsley
    salt, pepper, unrefined sugar

    So here goes:

    Fry bacon

    Fry thinly sliced onions in fat from bacon until golden

    Fry thinly sliced apples (cores removed, of course) You don’t want them to get mushy.

    Add salt, pepper and sugar according to individual taste.

    Blend everything together, sprinkle with freshly chopped parsley.

    Serve on rye.

    Yum yum.

  6. Oh my sweet lord of all things pork… I recently chucked in a bunch of thick sliced smoked bacon into homemade mac and cheese and I was in heaven… Non-Muslim heaven, obviously. I may burn in hell, but I’ll have known the perfection that is a great slice of bacon. Sigh.

    Ben: You are right, we don’t care, because bacon tastes great. And pork chops, and pork tenderloin, and ground pork, and while we’re on the subject, veal and foie gras and pretty much anything made from animals. So move along, nothing to see here.
