The Food Lab: Homemade Mayonnaise in Two Minutes or Less

I love homemade mayonnaise. The only thing I don’t like about it is I’m never sure how long it’s good for so I only make it if it’s during a time where I’m making a lot of sandwiches that need it, or tuna or egg salad.

I tried the immersion blender trick above but can never seem to get that to work so I just use a whisk and add the oil slowly until I create a good emulsion.
