One of my favorite cocktails of all time although it sometimes can be difficult to get a good one in a restaurant. You know those mixes they sell in the soft drink section of supermarkets? Never, ever let me see you using them. They’re syrupy, disgusting, and completely unnecessary. Margaritas are easy to make and only need a few simple ingredients.
1 ounce of fresh lime juice. Fresh is the key word here. Yes, you’re going to have to squeeze a few limes. Consider it a forearm workout.
1 ounce of agave syrup. Or a half if you like your drinks a little more on the tart side. I like my drink a bit more balanced and sweeter so I go with an ounce. Feel free to substitute with a simple syrup if agave syrup is difficult to find. You just want some sweetness to balance the lime.
1 ounce of orange liqueur. Cointreau is preferred but usually more expensive so it’s ok to skimp a bit and go with triple sec. You want an essence of orange and if you make a lot of these cointreau will start draining your booze money.
1 1/2 ounce of a good quality of tequila. 2 ounces if the day has been especially rough. My favorite tequila for margaritas is Milagro blanco. I’ve done a few blind taste tests and always seem to favor the Milagro. But any good 100% blue agave tequila will do. Stay away from any tequilas that don’t say 100% blue agave on it. They’re low quality and will give you a hangover which will destroy tequila for you for the rest of your life. They’re called mixtos and have 51% agave and 49% of something awful. If you don’t like seeing your insides on the outside around 4am just stick with the better stuff. Don’t worry about going with the really expensive tequilas such as Patron or Don Julio. The subtleties will get lost in the lime and orange liqueur.
I shake mine until the cocktail shaker is cold enough get your tongue stuck on it if you lick it (Please don’t, that’s just nasty) and I don’t bother with the salt. Salt is used to mask shitty tequila and we’ve already gone with a good one.
