Zucchini harvest!


Tomatillos almost ready. Will have to get out some salsa verde recipes.

    Um, you’re going to be needing a recipe.

    when you accidentally find that “big one”

    Slice in half.
    Scrap out seeds and toss.
    Scrape out pulp, and reserve.

    Fry ground meat (I like beef), garlic, salt, pepper, onions and zucchini together.

    While that’s cooking, chop up a large motzarella and a couple of tomatos.

    Mix all ingredients together, add some basil, and toss into zucchini shells.

    Broil until cheese melted.

    Anything that doesn’t fit in the shells can be cooked as a cassarole.

    This recipe got me through A LOT of oversized zucchini.
